El palmitato de ascorbilo es uno de los antioxidantes m\u00e1s fuertes. Puede prevenir la formaci\u00f3n de per\u00f3xido de aceite y retrasar el deterioro por oxidaci\u00f3n del aceite animal, aceite vegetal, pescado, margarina, leche y carotenoides, que es mejor que BHA y BHT. Si se usa en combinaci\u00f3n con vE y otros antioxidantes, el efecto antioxidante es m\u00e1s significativo.
