Introduction
Glutathione (GSH) is a tripeptide compound formed by condensation of glutamic cysteine and glycine through peptide bond. It is a kind of active short peptide with a wide range of uses. It consists of glutamic acid, cysteine and glycine and is widely distributed in the cells of mammals, plants and microorganisms. It is involved in almost all antioxidant reactions in the human body and has super powerful antioxidant properties, known as the “mother of antioxidants”.
