Allura Red (AC) , also known as Red 17, is a red azo dye, is also known as FD&CRed40 in the United States. It is used as a food coloring, E code E129. It is usually provided in the form of red sodium salts, but can also be used as calcium salts and potassium salts. These salts are soluble in water. In solution, its maximum absorbance is located at about 504nm:921. It is a type of food coloring, bright deep red, monochromatic variety. The pigment has excellent stability.
